Carroll Offers Creative Cuisine Courses

Tempt your taste buds and dazzle your dinner guests with creative cuisine from around the globe - or simply beef up your barbeque with great grilling techniques. Carroll Community College is offering a variety of non-credit, creative cuisine courses this spring with help from Alba Johnson and Tim Norwood, two well-known, local chefs.

A Taste of Tuscany
Tuscany (Toscana) is the heartland of Italy with its foods reflecting the very best of Italy's home cooking, its roots originating from cucina povera (peasant cookery). The Tuscans are well known for their superior yet simple dishes, which arise from using the freshest available products. They believe in enhancing the purity and natural flavor of ingredients, rather than trying to camouflage with excess sauces and seasonings. Discover the treasures of authentic Tuscan cuisine with such dishes as Burro e salvia (Sage and butter) tortellini, Florentine sausage and beans, Tuscan Caesar salad.

Vegetarian Ala Mediterranean
The Mediterranean diet can be categorized into three culinary regions: North African (Tunisia, Morocco, Algeria), Eastern (Egypt, Greece, Israel, Lebanon, Syria, and Turkey), and Southern European (Italy, France, Spain, Portugal). Wine and herbs are common to Southern European cuisine, while intricate and bold flavors of spice are common to North African foods, and yogurt, lamb, mint and nuts are prevalent in the Eastern cuisine. Whichever the region, the flavors are always robust, clear, and uncomplicated. Experience these robust flavors such as Vegetarian cous cous, Roasted Rosemary vegetables, Gazpacho, and Lemony lentil.

After living in Italy and North Africa for many years, she gained a practical understanding of the ingredients and techniques of the Mediterranean region which is shared with her students through distinctive culinary tips and suggestions.

Great Grilling
It's grillin' time! Whether you use charcoal or gas, food barbequed on the grill is the taste of summer. Jazz up your grilling techniques and gain tips for successfully grilling meats, seafood, vegetable and the sauces and marinades that make it so special. Learn about using direct vs. indirect heat, getting unique flavor using soaked charcoal or wood chips and more. Food tasting will be held at the end of this demonstration class.

Instructor: Chef Tim Norwood, a graduate of the Baltimore Culinary Institute, has been teaching culinary arts at the Carroll County Career and Technology Center since 1997. An experience teacher, Tim enjoys creating unique dishes using basic techniques and then experimenting with the flavors of authentic ethnic ingredients and combining them with bounty found in local grocery stores.
